Sunday is another international day so it’s time to cook Kaiserschmarren! Kaiserschmarren is part of Austria’s long and traditional food culture so I really suggest to cook it.

Let’s start with the ingredients for 4 people:

– 6 eggs
– 200 grams flour
– 50 grams sugar
– 1/4 litre milk
– pinch of salt
– raisins
– butter

How to do:

First separate the egg whites from yolks. Afterwards mix the yolks, sugar, milk and flour carefully. Add a pinch of salt to the egg whites and beat until stiff.
If it is stiff you can add the egg whites to the dough and fold carefully.

Melt butter in a large pan. Put the dough into the pan and add raisins. Let it cook on one side for a couple of minutes, turn it and tear into pieces.
Watch out that you don’t overcook the pancakes, otherwise they will be dry! Sprinkle the Kaiserschmarren with powdered sugar.

As a side dish I would suggest to use plum or apple puree. Gourmets use lingonberries as well.
Bon appétit!

Hey folks! Sunday is a typical day for delicious desserts in Austria.
Today is apple strudle day so check out the following recipe:

Strudel dough:

1 1/2 c. all purpose flour
1 egg
2 tbsp. oil
1 tsp. vinegar (white)
Dash salt
1/2 c. lukewarm water

Beat egg lightly with a fork. Mix flour, water, salt and vinegar until you have a smooth and silky dough. (Use your hands). Cover with a dish towel and let rest at least 1/2 hour. Flour an old table cloth (or any other piece of material) you need the kitchen table for this.

Roll dough as big as you can. Use enough flour on your table cloth so dough can’t stick to it. Then you have to pull the dough with your hands on all four sides until it’s paper thin and covers a large area of the table cloth. Be careful not to tear the dough.

Apple filling:

3 1/2 lbs. apples (peeled and coarsely chopped)
3/4 c. sugar
3/4 c. regular bread crumbs
1/2 stick butter, melted Cinnamon, lemon rind
Optional: 2 oz. grated hazelnuts and (or) raisins, as many as you like

Mix all ingredients in large bowl. After dough is rolled and pulled out, sprinkle with melted butter, then bread crumbs and finally apple mixture. Roll dough up quickly. Put dough on a buttered cookie sheet. Bake 45 minutes at medium heat. Brush melted butter on top. Serve hot or cold, with or without whipped cream or powdered sugar. In addition, vannila sauce is a perfect side for apple strudel.

Have fun and enjoy your strudle(s)! 🙂

Welcome to our first international day!

Something which you can find in almost every country are pancakes. But I’m sure that Austrian „Palatschinken“ are the best ones… 🙂

So, here the recipe for 4 small Palatschinken:

  • 130-150 gram flourPalatschinken
  • 2 eggs
  • 250 millilitermilk
  • salt
  • jam (usually apricot jam, but you can use every jam you like, just as Nutella)
  • butter to bake
  • powdered sugar to sprinkle over the Palatschinken

First you prepare the dough. Put the milk together with the eggs in a bowl and stir in the flour. Season the dough with a pinch of salt, mix through again and let the dough rest for about 30 minutes.
After half an hour you melt a teaspoon full of butter in a coated pan and pour enough dough in the pan that the base is full with dough (but not too much – otherwise the Palatschinken get too thick). Bake the Palatschinke at medium heat golden brown. Then turn it with a spatula and let it get golden brown on the other side as well.
Now you put the Palatschinke out and bake all the others in the same way. Put the Palatschinke in aluminum foil to stay warm until the others are ready.
Before eating you put jam (or Nutella) on the Palatschinke, roll it and put powdered sugar on it.

I hope you enjoy this very easy, traditional Austrian dessert…
